This is a lovely salad that has a great Mediterranean flavour. I’ve often tried to save money by opting for offputtingly pallid ‘salad tomatoes’, but I’d advise spending the extra 50p and going for the vine ripened kind. It will make all the difference to your salad!
Ingredients for tomato and lemon thyme salad (serves 3-4):
– 1 packet of tomatoes (can be cherry or plum)
– Olive oil
– A few pieces of lemon thyme
1. Roughly chop the tomatoes, place in a dish and drizzle generously with olive oil.
2. Take a few pieces of lemon thyme and pull off the leaves. Add these to the tomatoes and mix well. Season with salt and pepper.
